So, I have an issue with error log.
Sometimes, it doesn't show client IP. Example is here:

In first message I can see "client: 1.2.3.4" block, which shows the IP.
But in the second one message it seems to me, that I don't see IP because of the particular reason - PHP Error Message overflows some buffer which Nginx provides for error message, so the N

I suspect there's a lot difference methods to do something similar, but it all depends on what exactly you want to do and how you're going to "catch" remote_user on next service?
Can you give some examples of your current setup and further explain what exactly you want to do?

It's rather Linux-oriented question than Nginx-related.
If you wan to save Nginx intact - try to search how to pin package version on your OS.
In this case - your package manager will skip update for specific software, like nginx, so no changes in package version and configs will not be performed.

Nvm, Nginx works as expected. I had if section with the same set of rules. Map for real setting empty string by default, so it;s not an option if you need to no set some default setting if conditional is not met.
For those cases you really need to use "if" syntax it seems

It should be default value, but try add
proxy_set_header Connection close;
to the configuration.

I'm configuring FastCGI caching and adding some maps to skip cache. Specifically for WP bu it doesn't matter.
I have similar config (adding only related parts there):

As long, as I have "default" there - it always skipping cache, if only few maps' requirements are being met, not all of them.
And that's logical - as other map will rewrite $skip_cache
