I’m not going to get into the openbsd question, but I can tell you some of the different things that I have done to solve this kind of problem in the past. Your environmental constraints will impact which is feasible:

1. Use tcpdump to capture packets
2. Use netcat as an intercepting proxy
3. Use muffin as a http aware proxy
4. Use one or more virtual machines to host proxies
5. Use a cheap ($40) smart switch and a spanning port to mirror traffic
6. Use Goliath as a ruby proxy
There are many more ways to get the same results
