../configure --help | grep openssl=
--with-openssl=DIR set path to OpenSSL library sources

The sources, but not pre-built installation.

wget http://openssl.org/source/openssl-1.0.0d.tar.gz
tar zxf openssl-1.0.0d.tar.gz
cd nginx-1.0.2
../configure --with-openssl=../openssl-1.0.0d ...
